Legribiya (Moroccan Cookie)

Every year with Eid-al Fitr (the holiday that marks the end of the fasting month Ramadan), my mom and I bake various cookies. Today I would like to share this delicious and easy to make cookie recipe. We often call them zand koekjes in Dutch (sand cookies) because it’s a soft, crumble cookie! Let’s get straight into it:

Ingredients

  • 1 bowl of sunflower oil (400cl)
  • 350gr white caster sugar
  • 1kg (wheat) flower
  • 15gr baking powder (optional)
  • 4 table spoons of grinded and roasted sesame seeds
  • Almonds

Preparation

  • Preheat oven to 170 ° C
  • Stir the oil with the sugar and sesame seeds
  • Mix it with the flower
  • Knead this mix for a few minutes until it looks like the dough in the picture
  • Take an apricot amount of dough, start by rolling it into a ball and then form it into a pyramid shape (not too sharp: they should look like nipples lol)
  • Lastly, top them with an almond
  • Put the cookies in the oven for 15 to 20 minutes
