This traditional Dutch pie has become underrated, undeservingly. The rich combination of apple, cinnamon and nuts is brilliant. Enough said.
Ingredients:
Dough
- 300 gr flour
- 150 gr (full-cream) butter
- 100 gr (caster) sugar
- 1 egg
- 1 teaspoon salt
- 2 tbs water
Filling
- 700 gr apples
- Lemon (for zest and juice)
- 1 tbs cinnamon
- 1 small bag of vanilla sugar
- 3 tbs of (caster) sugar
- 150 gr walnuts
Preparation:
- Preheat oven to 180 ° C
- Dough goes without saying. Mix ingredients together and knead it well with your hands. Set the dough in plastic foil for 30 minutes in the refrigerator.
- Peel apples, cut them into small pieces and put in a bowl. Mix apples with the cinnamon, sugar, lemon zest and the nuts of your liking. Additionally, add lemon juice and stir well (optional).
- Use 2/3rds of the dough to fill up the spring tin. Put the apple mixture into the form. Finally, use 1/3rd for the diamond shapes as the topping of the pie. > Cut long streaks and place them criss-cross over the filling.
- Finally, coat the pie with an egg mixture.
- Bake for 1 hour until golden brown.
