Veggie Tajine for Three
This tajine is not only super easy to cook and delicious, but also perfect for social settings. It must be cooked in an actual tajine; this determines many of the flavours. Buy yourself a tajine and enjoy the oriental flavours that accompany it.
Ingredients
- 4 Potatoes
- 2 lemons
- 2 Tomatoes
- 1 Union
- 1 Carrot
- 1 hot pepper
- Green olives
- Garlic
- Cilantro
- Salt
Spices:
- Ras ‘l hanout
- Cumin powder
- Garlic powder
- Paprika powder
- Cayenne Pepper powder
Preparation
- Cut the veggies in preferred size (depends on the size of the tajine)
- Start cooking olive oil (and coconut oil)
- Put all the veggies in and spices, including the lemons (cut in four pieces). Stir a little and let it cook for approx. 30 min.
- Don’t serve it on plates, but simply eat from the tajine with bread – Moroccan style.
